Tasty Tuesday

I thought I would post a favorite recipe today. It's extremely simple and I actually got it from Kellys Korner Recipes Blog and as soon as I tried it I knew I would be making it A LOT! I have made it like 3 or 4 times and it is just as amazing every single time. I am not much of a cook AT ALL so when I say that it is easy then it really is easy.

Poppyseed Chicken
2 or 3 chicken breasts, boiled and cut in small pieces
1 16 oz sour cream (I use fat free)
2 cans cream of chicken (Again I use fat free)
2 tbls of poppyseeds (I don't measure - I just shake a ton in)
1 'tube' Ritz crackers
1 stick of butter

Mix the first 4 ingredients and put in a baking dish. Cover with crushed up ritz crackers. Melt a stick of butter and pour on top of the ritz crackers so they brown. Bake for 20-30 minutes at 350.



I always serve it over white rice and it goes great together. We also always have peas & carrots with it and it is completely amazing! I highly recommend that you try this recipe because you will be hooked immediately.

Writers Block

I have total writers block and at this point I really have nothing to write about that is going on in my life because all weekend we just worked in our yard, trying to get it ready for the BIG PARTY on Saturday. So I guess next week I will have a lot to write about. I won't have pictures right away because we hired someone to take pics so that we could just focus on the party and watching our boy grow up. And then on Sunday we are going to go to the coast overnight. It's kind of a combination of celebrating Zane's Birthday and James' graduation for us. So I promise next week you will have a ton to read about! :)

Goals

So my weight loss journey isn't going the way I had hoped it would and there a few things that have gotten in the way. 1) James leaving and being gone for 4 months 2) Zane deciding that naps are for sissies and he doesn't need them anymore 3) the fact that we are basically still in the middle of winter here in good old Portland, Oregon 4) I have just had the motivation to get myself up and start really working out. So this past week I decided that I was going to give myself an ultimatum: either lose the weight or be completely unhappy for the rest of my life. After I did that I decided it would be much more motivation for myself to get into the workout part of my weight loss journey if I gave myself smaller goals then to just look at it as losing 30 - 40 pounds! So I am breaking it up into 10 pound increments and when I reach that next 10 pound loss I will reward myself with something that I want each time. I know it sounds a little selfish but I really need this extra little push because I have a hard time making myself workout on a regular basis so I think if I have a small goal to reach I will work harder to get there so I can get whatever I choose it is I want after that 10 pounds is gone.for.good! (well until I get preggers again that is.) So for my first 10 pound weight loss goal I am thinking when I get there which I will be down to 147 pounds because I am at 157 now and I started at 167. I am think I will give/get myself a few new clothes items seeing as I will be down 20 pounds from where I began and I will need it. I think that is a good little incentive for myself to get there. It will probably end up being a really cute new dress and skirt and maybe a top or two. I am really going to do it this time because I need to be happy with myself again. I haven't liked the way I looked for a VERY, VERY long time and I don't want to feel that way anymore. So wish me luck on my new adventure into my weight loss journey!

{one} what profession have you always admired?
Teachers, definitely! They work so hard to provide us with a good education for so little money. 
I totally admire them for all their hard work. I have student taught so I know how hard it can be!

{two} what would the title of your memoir/biography be if it was written today?
"I am who I am because of who you helped me to grow into"

{three} how far do you commute to work?
About 5 feet to the next room to wake up my son and then down the stairs to the living room/kitchen.

{four} are your earlobes attached or detached?
Attached.

{five} do you eat the unpopped kernels of popcorn at the bottom of the bag?
Only the half popped kernels.

{six} what is the strangest gift you’ve ever received?
A gold apple bell from my grandfather when I was like 14.

{seven} what is one tv show that you wish hadn’t been cancelled?
Lost or Friends.

{eight} what is something that you are saving money for right now?
Zane's College.

{nine} what hobby would you like to take up?
Photography. But I know nothing about cameras, so I need to take classes first.

{ten} how many times a year do you get really dressed up?
Maybe like 3 or 4.

Baby Fever

I totally have baby fever! I am reading all my blogs and they are all having their babies and it is making me want to have another baby. Since my little man is going to be a year in less than 2 weeks and it is making me sad. But it is also making me want to be pregnant again...

Definitely a momma's girl.

And then having an infant in the house again...








But hubs is having NONE of that talk! Maybe in a few more months I can talk him into it or he'll talk me out of it... who knows what will happen in the coming weeks or months.

My Mother's Day 2011

So my Mother's didn't go as we had planned. We were going to go to church this morning but then we woke up and we were both exhausted and so we decided together that we would skip it today and just spend time at home. I had to get James's laundry done before he left for the week anyways. So it helped that we weren't going. (Thankfully I only have one more Sunday after this one until James is done with Academy and is home for good! PRAISE THE LORD! It has been a long 4 months.) My boys gave some very nice cards and then my hubby told me that he had ordered me this beauty from Gussy Sews:

And he is also getting me a massage for once he is home so I can have some much needed mommy alone, relaxation time! I am very excited for both of these wonderful gifts!

Luckily yesterday we went to breakfast with my family to celebrate Mother's Day because my mom had to fly out yesterday afternoon (she's a flight attendant for Horizon Air). So we had to celebrate with them yesterday and it was fabulous! We went to Tom's Pancake House and they have amazing food and we got a good 3 generation and 4 generation pics before we parted ways. It is our first time getting a picture of all 4 generations and my son is almost a year old. I can't believe we hadn't done it earlier but it was a special day for us to do it so I am glad we finally did it yesterday!





My hubs and son also took me to my all time favorite restaurant Mio Sushi! It was absolutely divine. I love that place so much I could eat it every single week! I would but James won't let me do that. We had all our favorite rolls; The California Roll, The Philadelphia Roll, The Spicy Tuna Roll, The Mio Roll, & my all time favorite The Double Crunch Roll (It's the deep fried one in the middle).

So all in all I have to say that I had a fabulous first Mother's Day just hanging out with my boys at home. Relaxing is sometimes good for the soul and today was the perfect day for just that. So thank you to both my boys for giving me such a wonderful day. I love you both so much!
