BBQ chicken salad

BBQ Chicken Salad
this salad is the best salad ever and super easy!


Ingredients::
1/2lb boneless skinless chicken breast
BBQ sauce
4 cups crisp lettuce 
2 cobs of corn {grilled + cut off the cob}
1 can black beans {rinsed + drained}
1/2 cup grape tomatoes {sliced in half}
1/4 cup cilantro {finely chopped}
1/2 cup crushed blue corn tortilla chips
Ranch Dressing {we use a packet of hidden valley + make it ourselves}

Optional::
cheddar cheese
green onion
avocado
jalapeno 

Season the chicken breast with salt and pepper and put in a plastic bag with BBQ sauce
{we did this overnight}
so it would be really flavorful.
Grill the chicken breast and the corn on the BBQ.
Baste the chicken as you go to keep it moist.
Cut up the lettuce.
Open the beans and rinse them + let them drain.
Cut the tomatoes in half.
Chop the cilantro.
Crush the tortilla chips.
And make the ranch dressing according to the packet directions.
Then just mix everything in your bowl
and top with ranch dressing + extra BBQ sauce.

cheesy beef + mushroom enchiladas

Cheesy Beef + Mushroom Enchiladas
this is one of our favorite meals!


Ingredients::

1lb ground beef
1lb button mushroom chopped
1 can mushroom soup {fat free}
1 can green chiles 
1 can olives {chopped}
2 small cans or 1 large can enchilada sauce {we use medium}
1 small onion chopped
8oz cheddar cheese {we use extra sharp}
8 tortillas 

Brown the meat, the onion + mushrooms in a pan.
Once that's done add in the green chiles + olives to heat them through.
Finally add part of the cheese to the mixture and let it melt.
In a bowl mix the enchilada sauce + mushroom soup.
Pour part of the sauce to cover the bottom of a baking pan.
Fill the tortillas with the meat + mushroom mixture
and place in the pan.
Then pour the rest of the sauce on top of the enchiladas
and top it off with the remaining cheese.
Bake at 350 for 30 − 40 minutes
and ENJOY!

mac+cheese me recipe

The blizzard continues so when I needed to make lunch for the kids 
and myself yesterday I decided to make 
a homemade mac+cheese.
I found a recipe on Pinterest but I modified it for what we had
and for our tastes.



Here's how I made it::

8 ounces pasta (any kind will work)
pinch of salt
4 tbsp butter
3 large eggs
1 cup whole milk
3 cups x-tra sharp cheddar cheese
1 tsp flour
1/2 carton Mushrooms (or any vegetable or even chicken)
1 tsp Garlic seasoning

Cook the pasta according to the directions on the box 
(and don't forget to salt your water it's the only time you get to season your pasta)
While that's cooking grate the cheese.
Once the pasta is finished cooking 
(save a little cooking liquid)
and strain it
add 3 tablespoons of the butter to the pasta 
and mix until it's completely melted
and covers all the pasta. 
In a small sauce pan on medium heat add the milk, eggs, cheese and flour
and whisk until the cheese is melted 
and the sauce is smooth 
and has thickened.
Add your noodles to your sauce and mix... mix... mix!
In a pan sauté your mushrooms in the remaining tablespoon of butter
and garlic seasoning until golden brown.
I dished up the kids then added the mushrooms because both my kids hate them
but I wanted a way to cut down on the carbs 
and add some veggies to mine

Snow Cream Recipe

I thought I'd share my recipe for snow cream today since we are having a blizzard here in Oregon which NEVER EVER happens so it's a big deal!


Here is how I made it for my kiddos + Husband::


1 cup fat free milk
1/3 cup sugar
3/4 of tsp of vanilla
pinch of salt
Sprinkles (optional)
6 cups of snow packed (approximately)


Mix the milk, sugar, vanilla + salt in a bowl 
and place in the freezer.
Go grab your snow 
(I recommend letting your mixture sit in the freezer for a little while...
so this is a great time to take the kiddos out and play!)
Grab your mixture from the freezer
and add the snow. 
You can add as much or as little as you want, 
I just kept adding until I got the consistency I liked.
Scoop and add your sprinkles 
then ENJOY!

Red Velvet White Chocolate Chunk Cookies

Recipe for Red Velvet White Chocolate Chunk Cookies:

  • 1 box - red velvet cake mix
  • 1 cup - all purpose flour
  • 2 sticks - butter {softened}
  • 1 egg
  • 2 cups - white chocolate chunks {chips}


Preheat oven to 350 degrees. 
In a mixing bowl, add the butter and mix until soft and fluffy.

Then slowly add the cake mix and flour.

Once that is combined, add the egg and mix completely.

Add white chocolate chips,

mix it for a minute or so until it is all well combined.  
{I use a wooden spoon to mix the chips in, I think it works the best!}

Form dough into one inch balls, 
{I used an ice cream scoop and it worked great}

place them into the oven for 8-10 minutes on an un-greased cookie sheet.
