Yummy snack

I make this for a snack all the time!
It is super simple
and delicious.
Plus it is extremely filling.

:: English Muffin + Avocado ::

Ingredients::
Whole Wheat English Muffin {whole}
Avocado
Lemon
Onion Powder
Garlic Powder
Sea Salt
Feta Cheese
Red Pepper Flakes

Toast your english muffin
and while it is toasting mix your avocado with the lemon juice, garlic powder, onion powder
and sea salt
{I don't have measurements I just add until it tastes how I like it.}
Once your muffin is done toasting add the avocado mixture to the top of the muffins
splitting it evenly between each muffin.
Then top with the feta cheese
and then finally add the red pepper flakes
{I use the packets from Pizza Hut they give you and split it between the two muffins it's the perfect amount for me... but if you don't like it so spicy just add less or none at all!}
That is it!
I promise you won't regret it.
ENJOY!!

Apple picking adventures

We went apple picking this last weekend like I said
and we had the best time!
My friend Lauren came with us so of course she had to take some pictures
which I would never object to...
since she's amazing
and you can never have to many family photos.

Lilah of course had to wear her apple sweater to go apple picking.
It was simply a must.

She's got the cheesiest smile on the block
and I can't get enough of it.

Zane picked this perfect apple
and I had to get a picture of myself holding it my hands

Of course Zane wouldn't look at the camera...
he was having to much fun picking apples.

Tasty Tuesday

I thought I would post a favorite recipe today. It's extremely simple and I actually got it from Kellys Korner Recipes Blog and as soon as I tried it I knew I would be making it A LOT! I have made it like 3 or 4 times and it is just as amazing every single time. I am not much of a cook AT ALL so when I say that it is easy then it really is easy.

Poppyseed Chicken
2 or 3 chicken breasts, boiled and cut in small pieces
1 16 oz sour cream (I use fat free)
2 cans cream of chicken (Again I use fat free)
2 tbls of poppyseeds (I don't measure - I just shake a ton in)
1 'tube' Ritz crackers
1 stick of butter

Mix the first 4 ingredients and put in a baking dish. Cover with crushed up ritz crackers. Melt a stick of butter and pour on top of the ritz crackers so they brown. Bake for 20-30 minutes at 350.

I always serve it over white rice and it goes great together. We also always have peas & carrots with it and it is completely amazing! I highly recommend that you try this recipe because you will be hooked immediately.

Show Us Your Life - Mother's Day/Father's Day Ideas

On Kelly's Korner today she is doing Show Us Your Life - Mother's Day/Father's Day Ideas. I thought I'd link up to her today and tell you my ideas for what I would like on Mother's day for myself and my mom, grams, & MIL and then also my ideas for what I want to do for James for Father's day and of course something for my daddy!
Me on Mother's day 2010
So for Father's day for James we decided that he is going to get his tattoo for Zane. It is what he wants and I know it's really sentimental for him. I also would like to take him to lunch or dinner wherever he wants to go.

For my daddy I am thinking of getting him something sports related because that is what he loves! Probably something Yankees because it will be Baseball season on Father's day.

For my mom, grams, & MIL I am thinking I probably want to get them mani/pedi's because what woman doesn't love pampering?! And for a 92 year old there isn't much else they need! And my mom works 2 jobs and never has any time to herself because my grams lives with her and my dad and she can't drive so my mom is always running her around plus she does so much for us that I think she deserves some pampering! I am also going to tell my dad he should get her a day at the spa... because she needs some time to herself to relax!!!

For me I want to RELAX! Since James has been gone for the last 3 months and will be gone until the 21st of May I really need some time to myself! I love my baby and being with him 24/7 but to not have anytime at all since James has been gone it would be amazing to have some time to just relax! So I would love to have a day of pampering too! A day at the spa would be absolutely amazing! Here in Portland the best spa is Dosha and this is where I would love to be sent for the day. I have also asked James that I have Mother's day after he is back because he'll still be gone when Mother's day is so I want to be able to have my day after he is home from training!!! But on actual Mother's day I want to wake up and just hang out with my hubs and baby boy, maybe go to lunch at Mio Sushi and then go grab a few cupcakes from St. Cupcake. That is what I would love it would be perfect day!

Relaxing Saturday

So today I went out to try on and order my bridesmaid dress for Lindsay's wedding in September at Charlotte's Weddings. This is the style of dress that I got in this color called majestic. It is adorable on but not that cute in this picture.

Alfred Sung
With some gold shoes and a bracelet and earrings... it's going to be super cute! Especially after I lose my baby weight completely... which I am still working on. But I am bound and determined to be back to 125 by her wedding in September.

Then on my way home I met my two boys at Hot Pot sushi for lunch. Now we're home with a roast in the crock pot, (recipe on Kelly's Korner Recipes) which is smelling heavenly as I write this, and I'm doing laundry and dishes and just hanging out with my two boys. Gotta love a great relaxing Saturday!

Craving

I have been totally craving sushi all day... I haven't been able to get it off my mind! No matter what I just kept going back to the fact that I wanted it and wanted it right then! So when James got home I very nicely asked him if would be a dear and go get me some sushi from our favorite sushi place in town, Mio Sushi.

We I could go there every day and eat. I love that place and my favorite, favorite roll is the Double Crunch roll. It is the most amazing thing you have ever tasted! I love.love.love. it!

Double Crunch roll
So my very sweet husband went to get me sushi. I am the luckiest girl in the world to have such a loving husband that will do that for me after working a long day and being tired. I couldn't ask for anyone better. And I get my sushi so I am a happy, happy girl!
